So, the other day, I was thinking of a cool way to feed spinach to my 16 month old baby. He loves cake and somehow knew that a cupcake was also a form of cake (and he calls it “kaakku”). So I thought to myself, why not make some spinach cup cakes. Spinach is full of vitamins and minerals and thus recommended to be introduced in a babies diet as soon as possible. If your child still shows resistance to having spinach, try showing her/him the Popeye cartoon where he becomes strong instantly after having it. May be that will work!!??
This Spinach cupcake recipe is simple, quick and healthy way to feed spinach to your baby/toddler. To my surprise, the little prince loved it!
You will need
Note: This recipe is for four small cupcakes since its meant for babies/ toddlers.
- Spinach – 1 cup
- Whole wheat flour/”Atta” – 3/4 cup
- Egg – 1
- Grated coconut – 1/4 cup
- Baking powder – 1/2 tsp
- Salt to taste
- Chilli powder(optional) 1 pinch
- Grated nuts (optional)
Steps
- Preheat the oven to 200ºC/390º F.
- Puree the spinach into a fine paste. I used fresh spinach but you can also use frozen/canned spinach.
- Take a bowl, add the egg and beat it until fluffy.
- Sift and add whole wheat flour and mix well.
- Add spinach paste and grated coconut to this mix.
- Then add baking powder, salt and chilli powder (optional).
- Mix the ingredients to incorporate well into the flour mix. Add a little bit of water if you think the mix is too thick. You can add nuts if you are serving it to older kids or adults.
- Put the mixture in cupcake form and place it in the oven for 10 min (time might vary depending on the type of oven/settings).
- Once its done wait for it to cool down before you serve it to your little Popeye.
